Based in Toronto, Ontario, St. Clair Spice was founded in 2026 by Toronto entrepreneur and hot sauce enthusiast Nick Hillier.

What started as simple curiosity quickly turned into an obsession. After buying a hot sauce that sparked an interest in the incredible variety and simplicity behind great sauces, Nick began collecting bottles from everywhere he could find them. Before long, that curiosity turned into experimentation in his Toronto apartment kitchen, with his partner and family regularly recruited as brave taste testers.

After countless batches and adjustments, Nick finally landed on a recipe he believed could stand up to the best. A bold, flavour-forward pineapple habanero hot sauce built for real heat lovers.

Inspired by Toronto’s incredible diversity, Nick also enjoys integrating flavours and influences from different cultures into his sauces, creating unique combinations that reflect the city he calls home.

Today, St. Clair Spice continues to craft small batch hot sauce in Toronto, focused on bold flavour, quality ingredients, and serious heat. Every bottle reflects the passion, experimentation, and creativity that started it all.
